Recipe fatigue has crept back in

Since having Birch, admittedly our cooking energy has been running on low power mode. Add a little quarantine to the mix, and we’ve been feeling pretty stale about fresh ideas for the kitchen. You’ve seen it – we have taco night and homemade pizza every.single.week.

So what was on the Blue Apron Menu this time?

Honey-Lime Tilapia with Sesame Seeds and Bok Choy Rice

This meal was the perfect showcase of flavors – sesame oil and sesame seeds (perfectly portioned in packets), a packet of Southern spices (garlic powder, ground mustard, smoked paprika and cayenne pepper), and honey + fresh lime. 

Calabrian Shrimp + Spaghetti Squash with Capers, Kale, and Breadcrumbs

We LOVED this meal – the panko breadcrumbs toasted with dried oregano and olive oil made the whole recipe – I loved the crunchy topping!

The shrimp smelled so good cooking with the Calabrian Chile Paste.

I also loved the capers, and the kale and spaghetti squash packed in the fiber and nutrition.

Spicy Chicken Stir-Fry with Carrots + Green Beans was a hit as well – both kids enjoyed!
