Melissa’s Top Soothing Soups
Hello, Melissa here! Who else is a lover of soups? January is my favourite time of year to make lots of soups that I can make double of & store in the freezer for an evening when I don’t really feel like cooking, or take for work the next day.
Making soup is also a great way of using up any leftover veggies or odds and ends that are in need of a little love, so I’m always inspired by what I’ve already got in my cupboards to make a really delicious soup; anything goes!
Here are a few of my favourite soothing Soup recipes for the new year…
Bean & Kale Soup
A simple store cupboard hearty soup in just 20 minutes. Any greens would work; swap the kale for spinach, chard or any leafy greens. If you use spinach, it doesn’t need much cooking time at all, so just add towards the end. If you’re not vegan like me, you could use a quality chicken broth and grate over a little parmesan or cheddar Get the recipe.
Broccoli Quinoa Miso Soup
This is a really feel good soup for me. I often have cooked plain quinoa in the fridge on a busy week so then this soup becomes a ‘ready in 10’ minutes dinner. When I’m feeling under the weather, I add extra ginger and I love this with quality chicken broth which I keep in the freezer.

Cock a Leekie Soup
This is a great dish for making better quality meat go further. All of the chicken is used here to make the broth, as well as the odds & ends of the veggies so you can enjoy less waste & more flavour. I’ve used buckwheat as an alternative to the traditional barley but feel free to use whatever you’ve got.
