What I Ate Wednesday

Was yesterday not the most GLORIOUS day outside here in Columbus, OH? Wowza. Jeff and I took full advantage and did our usual coffee walk, resulting in thirty gorgeous minutes in the sun. I just love starting my day outside!

Breakfast

Mixing different cereals and fruits and topping it off with chilly unsweetened vanilla almond milk has been my jam lately. I love cereal for a snack but in order for it to keep me full for a few hours, I have to add plenty of fat, like nuts and seeds.

Yesterday I mixed old fashioned oats, cinnamon PuffinsNature’s Path heritage flakes, Grape Nuts, chopped walnutsground flax, goji berries, and fresh blueberries. So so good!

Lunch

I’ve been enjoying these pecan apple chickpea salad wraps using these beet wraps. Such a nice change of pace and I like that I can pack it ahead of time and wrap it in foil. I snacked on some carrot and celery sticks plus a pickle on the side.

And of course I helped myself to some blue corn tortilla chips with ALDI’s pineapple poblano guac! Gotta have crunch. And fat.

Snacks

I sipped on the most refreshing tart cherry smoothie mid-day. I’ll be posting the full recipe soon, but it involved plenty of frozen tart cherries, a few dates, almond butter, spinach, and almond milk with cereal, coconut, and more almond butter on top. I really can’t stop with the almond butter. Or the cereal.

Dinner

Grilling season! I defrosted wild caught tuna steaks from ALDI and marinated them in this marinade (I tripled it since I was making four steaks). While I got that going, Jeff made brown rice in the Instant Pot by adding 1 cup brown rice, 1 1/2 cups water, and a good pinch of salt to the pot. Cook on manual for 15 minutes, quick release, done!

Jeff also grilled tons of zucchini, bell peppers, and zucchini that I tossed in avocado oil, balsamic vinegar, salt, garlic powder, and pepper, We threw on some bok choy to crisp up at the end, too. It was such an amazing meal! The tuna steaks were a really nice change of pace. Variety is key, my friends!

Dessert

Talk about a serious stack of peanut butter zucchini brownies! I enjoyed a couple of these on the deck before watching Designated Survivor. I also heard a new season of Handmaid’s Tale and Big Little Lies is out, AKA I have a lot of catching up to do.
